The 1861 Keeping Porter stems from the 1861 Running Porter that Orbit brewed together with Anspach & Hobday back in the spring of 2022. The brewers kept back the final barrel of Running Porter to be aged in oak barrels with a house blend of Brettanomyces. The ageing process has produced a smooth, luxurious, walnut-coloured beer, reminiscent of a burgundy red with a complex, balsamic acidity. Aromas of cocoa, oak, vanilla, leather, and tobacco, with the malt profile developing a milk chocolate sweetness along with flavours of figs, malted biscuits, and a long, dry finish

This is based on a 19th century recipe from the Truman Brewery in Brick Lane, which we've adapted and modified. The black malt brings lots of burnt toast, overly roasted coffee flavours, and an assertive acidity. We have started using a little chocolate malt to try and reduce those acrid, burnt flavours, and some crystal malt to bring sweetness to balance the acidity. The resulting beer is dark, dark black. It has an oily texture, loads of rich dried fruit and alcohol warmth, often with hints of leather, tar, smoke and chocolate, and then a herbal hop bitterness on top

We wanted to create a more palateful, stronger beer, but without spices. We needed a mixture of five different barley malts for the dark ruby colour and the body that we wanted. Then we wanted hops that were not too strong to contribute to the roundness of winter beers. This is why we opted for the Slovenian Styrian Golding, not very bitter, but used in great quantity and combined with a little Cascade, for a very fine hopping

This beer was created for the 25th birthday of Cantillon’s Quintessence, using an ancient and typically Belgian technique called coupage: (The blend of a sour beer with a young ale). The sour beer used is 2-year-old Lambic from Cantillon. The result is an amber beer, with an appealing tartness and a deep, complex vinous character

A spontaneous fermentation beer obtained from the fermentation of destoned fresh plums in a blend of 1 , 2 and 3 years old lambics. The taste is tart and dry but has a certain roundness. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose
