We wanted to create a more palateful, stronger beer, but without spices. We needed a mixture of five different barley malts for the dark ruby colour and the body that we wanted. Then we wanted hops that were not too strong to contribute to the roundness of winter beers. This is why we opted for the Slovenian Styrian Golding, not very bitter, but used in great quantity and combined with a little Cascade, for a very fine hopping

Our Straffe Hendrik Wild is a wild variant of the well-known Straffe Hendrik Tripel. The beer undergoes a refermentation in the bottle with a wild yeast: the 'Brettanomyces' or 'Brett' yeast. This gives the beer a longer natural shelf life and ensures a special taste evolution over the years

This beer was created for the 25th birthday of Cantillon’s Quintessence, using an ancient and typically Belgian technique called coupage: (The blend of a sour beer with a young ale).
